Decadent Ultimate Chocolate Cookie Recipe
Soft, Gooey and Ohhhh So Delicious, This Recipe is a Keeper!
When I was a pastry chef for a large hotel in downtown Chicago, my pastry team was on the search for the perfect sweet treat to give our guests. The challenge was… what if the guest does not eat their treat right away? We needed a tasty treat that “holds up” over time and tastes just as delicious the day it is presented as it would several days later? I know what you are thinking - who the heck doesn't eat a cookie right away - right? Well, let’s say those people exist - Ha! After experimenting with countless recipes and eating more cookies, candies and treats than one person should have, our team developed what is a truly fabulous chocolate cookie! This cookie is decadent, not too sweet, gooey and keeps beautifully. Enjoy!
Ultimate Chocolate Cookie Ingredients:
5 Tablespoons Soft Butter
1 cup Sugar
3 each Eggs - room temperature
1 1/2 teaspoons Pure Vanilla Extract
8 ounces Melted chocolate
1/2 cup, plus 1 teaspoon All Purpose Flour
3 T Cocoa Powder
1/4 teaspoon Baking Powder
1/4 teaspoon Salt
6 oz. Semi-Sweet Chocolate Chips
Directions:
Preheat a conventional oven to 350 degrees Fahrenheit.
Melt the chocolate over a double boiler. Set aside.
Using an electric mixer, combine the butter and the sugar together. Mix using the paddle attachment until the butter and sugar are light and fluffy (approximately 3 minutes). Add the room temperature eggs and mix until well combined. (If your eggs are cold you can place your eggs in a bowl of warm water to get them ready to use.)
Add vanilla extract and scrape down the sides of the bowl. It is important that your ingredients are room temperature before your next step. Pour in the melted chocolate and mix until combined. Add the dry ingredients, scrape down the sides of the bowl and add the chocolate chips. Mix until thoroughly combined.
The mixture will be very soft! Chill for approximately 2 hours. Scoop batter into balls and continue to chill. Cookies should be cold before being baked in the oven.
Bake at 350 degrees until the cookies begin to “crackle” on top. The time will vary based on the size of the cookie and your oven. Cookies in my oven took 12 minutes. Remove from the oven and allow to cool. Store in an air tight container in a cool place or better yet - Eat!
