Celebrate the Taste of Summer With a Berry Cobbler
I love eating my way through summer - and I literally do. For me, summer is about fresh grilled corn, warm heirloom tomatoes and locally grown peaches that are so juicy that, with every bite, they dribble down your chin. Summer reminds me of my grandparents over sized garden full of every vegetable that you could imagine. A summer visit meant being sent out with my sisters to pick okra and corn. Some days it meant digging potatoes with my grandfather. Other days it meant being sent out unsupervised to eat more strawberries than I ultimately placed in the bucket. To this day, I can’t begin to describe the excitement that I have of trudging off to the farmers market to discover just what summer has to offer.
A spoonful of Triple Berry Cobbler is like tasting summer in my mouth. I love a mix of strawberries, blackberries and raspberries topped with a crunchy crumble and creamy ice cream. It is heaven - and exclusively summer’s heaven.
Triple Berry Cobbler
Crumble Topping
Ingredients:
1/2 cup butter melted but cooled
2/3 cup white granulated sugar
1 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon cinnamon (optional)
Directions for Crumb Topping:
Mix all of the dry ingredients together in a mixing bowl (I use my Kitchenaid). Using the paddle attachment with the mixer on low, pour the (slightly cooled) melted butter into the dry ingredients and continue to mix until you get large crumbles. Remove from the mixer and finish by hand by working the crumble through your fingers to achieve the size crumble that you are looking for. Spread the raw crumble on a baking pan and chill in the refrigerator for a minimum of one hour before using.
Place chilled raw crumble on top of the prepared berry mix.
Berry Filling Ingredients:
6 cups of mixed berries such as raspberries, blueberries and strawberries
2 Tablespoons melted butter
1/3 cup granulated sugar
1/2 teaspoon pure vanilla extract
1/2 teaspoon of ground ginger
1/2 teaspoon of ground cinnamon
1/4 teaspoon salt
1 Tablespoon of corn starch
Directions:
Preheat a conventional over to 350 degrees Fahrenheit.
Place the berries in a medium size mixing bowl.
Gently toss the berries in the melted butter.
Sprinkle the remaining ingredients on top of the berries and gently toss until coated.
Place prepared fruit in a (pan sprayed) baking dish or cast iron skillet.
Top with crumble and bake at 350 degrees Fahrenheit until the mixture just begins to bubble - approximately 30 minutes.
Allow the cobbler to cool before serving. Cobbler can be served warm or cold.
Top your cobbler with a scoop of premium ice cream or fresh whipped cream!
